We’ve developed a proprietary dough-making process that fuses tradition with innovation. Using a long pre-fermentation phase, controlled room temperature, and cold fermentation, we allow flavour to develop naturally while softening the gluten structure—creating a dough that’s light, digestible, and full of character.
